Catering for New Year parties is well underway and we have just started taking bookings for Valentine's Day dinner parties and events. Peope often ask me..."why Buffalo“? Well, it stemmed from my godmother’s gift of a buffalo to a family in Africa and the buffalo’s name was Ben – Buffalo Ben. When we were thinking of a name for our business the name Buffalo seemed appropriate, after all mozzarella cheese is known as Buffalo cheese representing the vegetarian palate and Buffalo steaks for the meat eaters – so Buffalo it is.

SMOKED SALMON CANAPES ON RYE BREAD (MAKES 30)
200g Smoked salmon cut into small triangle pieces
200g Cream Cheese (20% fat)
20 sprigs of Fresh Dill: separate 30 small pieces for garnish, the rest finely chopped
1 tsp Lemon Juice
Salt & Black Pepper
Rye bread loaf medium sliced 1cm (approx) thick
1 small pot of Beluga Caviar
Slice the Rye Bread & using a 2.5cm cutter make 30 round base pieces
Mix the Cream Cheese & finely chopped dill in a bowl adding the lemon juice slowly. Season to taste
Lay out the rye bread on a platter & spoon a small amount of the Cream cheese mixture onto each.
Place a Smoked salmon triangle on top of each & garnish firstly with a little caviar & top with the dill
